How to make a delicious daisy at home
Ingredients:

Lamb meat (from the leg or neck): 500 grams

Chickpeas: 1/2 cup

Kidney beans: 1/2 cup

Potatoes: 2 medium-sized

Onion: 1 medium-sized

Garlic: 2 cloves

Tomatoes: 2 medium-sized

Turmeric: 1 teaspoon

Salt and black pepper: to taste

Cinnamon (optional): 1/2 teaspoon

Water: as needed

Butter or oil: 2 tablespoons

Herbs (rosemary, thyme, or tarragon): for garnish
Instructions:

Prepare the ingredients:

Cut the lamb meat into small pieces. Rinse the chickpeas and kidney beans, and soak them in water for 4-5 hours.

Chop the onion and sauté it in a pot with some butter or oil until golden.

Mince the garlic and add it to the onions to release its aroma.

Cook the meat:

Add the lamb meat to the pot and sauté it with the onions and garlic until it changes color. Add the turmeric and mix well.

Add the beans:

Add the soaked chickpeas and kidney beans to the pot. Then chop the tomatoes and add them as well. Season with salt and pepper.

Add the potatoes:

Peel the potatoes and cut them into quarters, then add them to the pot.

Cook the Dizi:

Add enough water to cover all the ingredients. Place the pot on medium heat and let it simmer for 2-3 hours, allowing all the flavors to meld together.

Stir occasionally to prevent sticking, and let the stew cook slowly until the meat is tender and the beans are fully cooked.

Taste test:

Once the meat easily falls off the bone and the beans are tender, your Dizi is ready. At this point, you can add cinnamon for extra flavor, adjusting the taste as desired.

Serve the Dizi in traditional Dizi bowls. It is typically served with sangak bread, fresh herbs, and a side of pickles for a complete meal.

Tips:

If you prefer a richer Dizi, you can add some butter or lamb fat (known as “Deneh) towards the end of cooking.

In some regions, Dizi is made with white beans or lentils, so you can substitute these if preferred.
